Healthy and Hearty Lentil Lasagna For Vegetarian’s

I made this dish up several years ago when my family and I were testing out different aspects of vegetarianism. I missed having my Italian dishes such as lasagna and so I started experimenting with some of our favorite dishes, and I came up with lentil lasagna. I know that lentil lasagna does not sound very appetizing, but it is actually quite tasteful and packed with protein and fiber.

Ingredients

1-lb lasagna noodles
1-lb bag of lentils
1 small onion
2 cloves garlic
3 cups marinara Sauce
8 oz ricotta cheese
1 egg

Vegetarian Indian Bliss

Welcome to the Gourmet Indian Series. Today we bring you the vegetarian treat, Vegetable Korma.

Ingredients: 3/4 cup each of chopped cabbage/beans/carrots/potatoes and cauliflower, 1 small onion sliced, 2-3 tbsp. ghee (clarified butter), salt to taste, coriander leaves for garnish, Gravy: (blend the following into a very smooth paste), 1/2 a coconut shredded, 1 small onion, 5-6 flakes garlic, 1″ piece ginger, 2 tbsp. curd (plain yoghurt), 1/2 tsp. poppy seeds, 1 tsp. cumin seeds, 1 tsp. coriander seeds, 3 green chillies, 2 dry red chillies, 2-3 peppercorns, 1/2 tsp. saunf (fennel), 1 small stick cinammon, 1 cardammom, 2-3 cloves, 1 tbsp. cashewnuts, 1 small tomato, 2 tsp. thick tamarind juice or 2 tsp lemon juice

Method: 1. Steam the vegetables till they are about half done. Remove and set aside. 2. Heat the ghee and fry the sliced onion till it starts changing color. 3. Now add the blended masala and bhunna(fry) till the oil starts leaving the sides of the masala. This will take a minimum of 15 minutes. Even if the masala sticks to the bottom of the pan, don’t worry. The more the masala fries, the better the dish will taste. If the masala starts sticking to the pan, lower the heat and sprinkle a little water and continue frying, stirring continously. 4. When the masala is fried well and turns aromatic, add the half cooked vegetables and salt to taste. 5. Add some water to get a gravy. Mix well. 6. Put it back on the stove and bring it to a boil on low heat. The vegetables should be done by now. Remove from heat. 7. Garnish with coriander leaves. serve hot with chapatis or plain rice.

Tofu For Baby - How This Amazing Food Can Benefit Your Baby’s Diet

Tofu - that’s just for vegetarians, right?

Wrong.

Tofu is a highly nutritious food that, rather than being
seen as just an alternative to meat, should be included in
your baby’s diet on its own merits!

Tofu is part of the legume family. It is fermented soymilk
curd — the process by which it is made compares to the way
that cheese is made from milk. Tofu is a rich source of
protein, calcium, iron, fibre and fatty acids — key
components for good nutrition.

There are two basic types of tofu — hard/firm tofu, often
used in recipes that needs a consistency which holds
together well — and soft or silken tofu, generally used for
desserts, smoothies, soups and sauces.

Fresh tofu has a sweet aroma when opened — any sour odour
would indicate that it is stale and should not be used for
your baby. It will keep for seven days in the refrigerator
and should be placed in an airtight container of water. It
is, however, essential that the water is changed on a daily
basis. Tofu does not freeze particularly well — upon
defrosting it becomes somewhat spongy in texture and appears
discolored.

You can introduce this versatile and healthy food to your
baby once he/she is at least 8 months of age. (It is
important, however, to be aware that soy is a potential
allergen. When introducing it to your baby for the very
first time, watch carefully for any signs of an allergic
reaction. Symptoms include nausea, vomiting, stuffy or runny
nose, watery or red eyes and wheezing. Should you ever
suspect your baby is allergic to a particular type of food,
then contact a medical professional immediately).

It is very easy to incorporate tofu into your baby’s diet
because it has very little taste of its own. Instead, it
absorbs the flavors of any foods it comes into contact
with.

Initially, you could try blending tofu with cottage cheese
or avocado, for a simple, nutritious meal. Soft tofu creamed
with fruit would make a delicious dessert for baby.
Alternatively, tofu can be cut into chunks and served to
your baby raw, as a healthy finger food.

Taking into account tofu’s extensive nutritional properties,
along with its versatility, it would clearly provide a very
worthwhile boost to most babies’ diets.
